Protein Banana Muffin


While cleaning the kitchen post meal prep today, those over ripe, brown, mushy banana lying on kitchen counter caught my attention. I usually peel them, put it into ziploc and throw them in freezer, these frozen bananas are perfect for making smoothies. But today I was in the mood for some baking.



I looked up the banana muffin recipe online and changed the ingredients a bit to make it low in carbs and high in protein. The regular muffins are loaded with carbs so my first goal was to cut down on that. I replaced the all purpose flour with almond flour. This flour is gluten free, low in carbohydrates, high in fiber and a great source of protein.Although banana is very sugary, but to add to more sweetness, I used vanilla protein powder. Greek yoghurt and egg was the other two protein booster ingredients.



This was the first time I tried making these muffins and I have to say, one of the best ideas for sweet cravings. The muffins came out incredibly soft, moist and delicious, a perfect little treat.  This recipe made 12 muffins, me and Mradul tried one each and could not resist eating another, killing our craving we settled by sharing one more which made it to one and half each, lol.


Warning !! This will not taste like the heavenly muffins you get at your favorite bakery, these are meant to be healthy and low in calories, and almond flour tastes a bit different than the regular but when you look at the macros, I promise you will forget the bakery muffins and immediately fall in love with these muffins.

PS : There is no additional sugar in this recipe, so if you like muffins really sweet, add some extra sweetener(honey, maple syrup, truvia are some of the options I will go for).

Ingredients :

1 1/2 cup almond flour

1 tsp baking soda

2 scoops of whey vanilla protein powder

3 ripe bananas

1/2 cup non fat plain greek yoghurt

1 tbsp olive oil

1 egg

1 tbsp vanilla essence

Directions :

Preheat oven to 350 degrees F.

In a bowl, whisk together almond flour, protein powder and baking soda

Add banana, egg and greek yoghurt to a blender and blend it well till combined.

Add this wet ingredient to the flour mixture, and mix it well.

Now spray a 12 cup muffin tray with non stick spray or use parchment paper.

Divide the batter equally in the muffin tray and bake it for15-20 minutes. I insert a tooth pick to check if it comes out clean to take muffin out of the oven.

Cool the muffins and its ready to eat.
